Prawn Linguine with Tomato Sauce: A Perfect Dinner Idea

Once you’ve become adept at making homemade pasta, it’s time to utilize those skills in a delightful way. Prepare yourself for an exceptional culinary experience with this exquisite dish of fresh prawn linguine in tomato sauce. This pasta recipe has quickly become my preferred choice whenever I desire a delectable and slightly elevated dinner. For a perfect pairing, savor it alongside a glass of fine white wine. It’s an evening worth savoring and enjoying to the fullest!

Ingredients:

  • 100g concasse tomatoes
  • 15g garlic
  • 1g red chilli
  • 10g anchovies (optional)
  • 1g english parsley
  • 30g white wine vinegar
  • 20g olive oil
  • 100g fresh shrimp (with shells)
  • 100g fresh pasta

Method:

  1. Prepare the prawns by removing the shells and slicing through the back to remove the veins. Keep the prawn heads separately. That’s where all the good stuff (prawn oil) is.
  2. Concasse the tomato.
  3. Dice the garlic, slice the red chilli and chop the english parsley.
  4. Once all ingredients are prepared, you can begin cooking by heating a pan with olive oil. Once heated, add in garlic and chilli.
  5. Add in the prawn heads. While the prawn heads are cooking, push down on the heads to extract the prawn oil from the heads.
  6. Once the prawn oil has been extracted, remove the heads.
  7. Optional: at this stage you can add in the anchovies for a bit of additional flavour and cook down it down until it melts in with the prawn oil.
  8. Add in the prawns until cooked.
  9. Add the pasta into the sauce and turn off the heat.
  10. Toss in the tomato concasse.
  11. After plating, garnish with the chopped english parsley and enjoy your fresh prawn linguine with tomato sauce!

Notes:

  • For an added flavor boost, consider incorporating a splash of white wine after adding the prawns. This step helps to enhance the overall taste of the dish. However, it’s important to cook the wine on high heat to ensure that all the alcohol evaporates.
